Cranberry Citrus Muffins (Gluten Free, Dairy Free)

Last night as a jam-packed bus of Disney fans gathered together like sardines to travel from Hollywood Studios, one high school boy up front began yelling a christmas tune. Then, his friends joined in. And, then the whole bus. Yep, that’s right for the twenty minute ride back from Hollywood Studios to my hotel last night we all sang Christmas carols. (It was pretty crazy.)

Point of the story, I’ve been traveling a lot this holiday season. And, with a hectic holiday season and multiple dietary restrictions, it can be easy to fall behind and miss some meals. That’s why I love muffins so much! They’re easy to pack when I’m traveling whether it’s on an airplane across the country or just down the street to my neighbor’s holiday party.

With the holiday season, I had to step up my muffin game. (Read: My mom stepped up her muffin game.) And, this seasonal recipe is one handed down from my grandma. In fact it’s her old-fashioned cranberry bread recipe turned gluten free! (I think it tastes best as mini muffins, but more on that later.)

Now to turn these gluten free, I used Cup-4-Cup Wholesome Flour Blend. I know I said this works best for cupcakes. BUT, with the cranberries keeping in some moisture, these turn out to be the perfect consistency. They’re not too dense as you may fear. I certainly believe that ANY cup-4-cup flour doesn’t work for all recipes. (It’s because the amount of xanthan gum that you need varies based on the type of product.) BUT, this flour blend works here, AND I’m sure you can find another gluten free flour blend that works as well. Cup-4-Cup just meets my dietary needs the best. (It’s dairy free!)

These cranberry muffins are sure to be a crowd pleaser with their dash of citrus, so without further ado, let’s see the recipe!

Cranberry Citrus Muffins (GF & DF)*

Allergen Warning: Contains egg.

Ingredients:

  • 2 cups Wholesome Cup 4 Cup flour
  • 1 cup granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • ¼ cup shortening
  • ¾ cup orange juice – fresh squeezed is best
  • 1 tbsp. grated orange peel
  • 1 egg, well beaten
  • 2 cups fresh cranberries – could use frozen if fresh are not available

Directions:

  1. Preheat oven to 350 degrees.
  2. Whisk together the flour, sugar, baking powder, baking soda and salt in a large bowl.
  3. Use a pastry blender to cut in the shortening until the mixture resembles coarse cornmeal.
  4. In a small bowl, combine the orange juice and grated rind with the well-beaten egg.
  5. Pour the orange juice / egg mixture all at once in to the dry ingredients, mixing just enough to dampen.
  6. Use a food processor to coarsely chop the cranberries. Carefully fold in to the batter.
  7. Use either regular sized or mini muffin pan. Use a cupcake liner or lightly grease with shortening. Fill each muffin 2/3 full with batter.

  8. Bake regular sized muffins 18 – 22 minutes, until just starting to brown and cake pick comes out clean.

  9. Bake mini muffins 14 – 17 minutes.

Yum! So, there you have it! One easy, transportable breakfast, snack, or treat for the holiday season. And, it meets so many dietary requirements, including gluten and dairy free.     1. Happy Holidays! Yeah, we love cranberries, but we also use a lot because they help keep moisture when you’re cooking with gluten free flours. Bet your muffins were delicious as well! 🙂
