Chilled Watermelon Soup for a Summer Day (GF, V)

SOUP! It’s by far my favorite meal all year round. It’s easy to make a big enough portion, so you’ll have enough left overs to last the week. In fact, during the winter it’s difficult to visit my blog and not find a chili or soup recipe. Soups are an effective way to heat up your body on a cold winter day, and they can also be a wonderful way to chill off your body on a hot day. That’s why I’m bringing you a chilled watermelon soup this week!

So far, it’s been a fairly mild summer. Yesterday, we only hit a high of 69 degrees in Boston! Crazy! Nonetheless, the weather should be warming up. And, this chilled watermelon soup will keep you nice and cool as you enjoy a poolside party.

I labelled the soup as gluten free and vegan because that’s how I enjoy this meal. However, for the dairy lovers out there, you may also want to add in some feta cheese. I hear it’s a nice complimentary touch to this dish. (Plus, that’s how both Rachael Ray and my mom serve it.)

So, without further ado, here’s the recipe!

Chilled Watermelon Soup (GF, V)

Allergens: Celiac friendly and free of the top 8 allergens. Always buy specific ingredients that meet your allergen needs.


  • 5 cups diced seedless watermelon
  • 1 cup diced seeded peeled cucumber
  • ½ cup chopped seeded plum tomato
  • 4 tsp. red wine vinegar
  • ¼ cup torn basil


  1. Purée 4 cups of watermelon and ½ cup of cucumber with the tomato and vinegar in the food processor. Then, season to taste.
  2. Chill the soup by refrigerating it for two hours or freezing it for 10 minutes.
  3. In medium bowl, combine remaining watermelon and cucumber. (If you can have dairy, this is where you add in the feta cheese.) Season, and place in the bowl.
  4. Finally, pour soup around themelon-cucumber mixture.
  5. Top it off with basil and enjoy!

Tips and Tricks

  • If you can have dairy, add ½ cup of crumbled feta cheese in Step #3. The flavors blend beautifully. (That is, according to my family, I can’t actually have feta cheese.)
  • In our house half the dairy eaters like the feta and half don’t. So you can always make it, and then sprinkle it on in step 5 with the basil as well. That way, you can try it without the feta first! 🙂
