A Splash of Summer in the Winter: Raspberry Dressing (GF, V)

Raspberry Dressing (GF, V)
Winter Wonderland at Work

Winter is fully underway out here in the mountains. Sure, we have less snow than we’d like. (That’s always the case.) However, there’s been some beautiful sunshine, and the season is off to a very nice start.

While I love the winter, there are some things that I miss about the summertime. Of course, there are the pool parties and tennis matches. More importantly in the food world, I miss light, refreshing dishes.

Don’t get me wrong, I love my Texas-Style Chili and my Classic Beef Stew. Yet, sometimes it’s nice to flashback to summer, and this raspberry dressing does just that. It’s perfect on top of a side salad, or on a main dish if you add some protein to the dish.Raspberry Dressing (GF, V)

Best of all, you can make it with frozen raspberries to experience a bit of summer all day long.
So, come check out my picture guide of this delightful raspberry dressing recipe from Bon Appetit in 2001.

That’s it! This salad dressing is simple to make, and the perfect way to bring a bit of sunshine into your home as we enter the winter season. This weekend, I’ll be hitting the slopes as I have been all week. I can’t wait to share this dressing with my Fiesta Friday friends and see what you’re bringing to the party.

What’s your favorite summertime or wintertime dish?!

Until next time, Happy Cooking!

    1. Thanks, Julie! I know that many recipes can be tricky with frozen fruits too, which is why I’m so glad this one is an easy substitution. Have a wonderful weekend! 🙂

    1. Thanks, Tracey! I’m definitely a fan of fruity salads to say the least. (Although, I like heartier ones with squash too, so maybe I’m a salad girl as well.) Hope you have a relaxing weekend! 🙂

  1. I’m down south in Atlanta at the moment, and it’s still in the high 50’s/low 60’s here! I’m not a fan of the cold, but it’s definitely too warm for December! I don’t think I’ll be seeing any snow until I’m back home in the UK (if at all).
This dressing sounds so yummy, and I love that you can make it with frozen raspberries so you really can inject some summer into a cold winter day!

Thanks so much for bringing this along to Fiesta Friday, have a lovely weekend 😀

    1. Michelle,

I drove through Atlanta (GA) for the first time on my trip to the mountains. I was only there for three hours, but it was a pretty neat city. Apparently, my body isn’t a fan of the cold, but my mind certainly loves it. It’s mainly all the fun winter sports options. (And, honestly, I sometimes become colder getting in and out of the water in the summertime than when I can just bundle up for the winter.) 🙂

      Have a fantastic weekend! 😀

  2. Oh my goodness, THIS looks incredible, I’d probably eat it by the spoonful, alas I am too lazy to make my own dressing. I HATE washing my food processor, so I found a Braggs Organic Raw Braggberry Dressing I LOVE to use in the summer!

    1. Thanks, Amber! I must admit that most of the time I throw (or carefully place) my food processor parts into the dish washer, and then go after those small nooks and crannies separately. And, that dressing sounds tasty! I love how the Braggsberry dressing combines blueberry, raspberry, acai berry, goji berri, and grape flavors. I’ll have to try it out (or make my own). 🙂
