Happy Friday! Today signifies the end of the workweek, and I am excited to announce that I’m headed to the beach. But, before I head to the actual beach, I crafted up a sandcastle in my own kitchen. 🙂

What better way to celebrate the summertime beach weather than with some ice cream to cool off?!

The sandcastle cake has actually been around for quite some time. We made this cake to celebrate our first Sister’s Day back in the nineties. Sister’s Day is a holiday where my sister and I spend the day together, buy each other a gift, and well, can’t be mean to each other. I believe that was my mom’s idea originally at least.

The original sandcastle was coated in graham crackers. But, I couldn’t find a GF graham cracker that met my allergy needs during my one-stop shopping adventure of the week. Instead, I took the chocolate chips out of a chocolate chip cookie mix that I had in my pantry, baked them, and used the cookie crumbs! .

Now, you make this recipe EXACTLY as you’d expect, but I figured I’d outline the steps just the same.

Sandcastle Cake

Allergens: Pick your ingredients to meet your own allergy needs.


  • GF, DF “Ice Cream” of Your Choosing
  • Graham Crackers, Cookie Crumbs, etc.
  • Sandcastle Molds


  1. Take “ice cream” out of the fridge and let sit for an hour.Sandcastle Cake (GF, V)
  2. Once soft, fill a sandcastle mold with said “ice cream.”Sandcastle Cake (GF, V)
  3. Place tinfoil over the bottom, and place in the freezer upside down.Sandcastle Cake (GF, V)
  4. Make crumbs from graham crackers or a cookie mix (without chocolate chips).Sandcastle Cake (GF, V)
  5. Remove sand castle mold from freezer and BRIEFLY run the very bottom edge under hot water. Squeeze the mold until the structure pops out. Return to the freezer.Sandcastle Cake (GF, V)
  6. When the crumbs are ready, remove “ice cream” sandcastle and COVER in crumbs.Sandcastle Cake (GF, V)
  7. Decorate with flags, beach chairs, etc.Sandcastle Cake (GF, V)
  8. Slice up and enjoy! (The best piece is one that has the most cookie crumbs, but you can always add extra from the surrounding sand. JSandcastle Cake (GF, V)

Tips and Tricks

  • I’m hooked on So Delicious’ Mint Chocolate Chip. My sister (the gluten-eating test taster) likes Coconut Bliss’ Dark Chocolate Ice Cream. And, Amber (over at Eats and Exercise by Amber) recommends Wink, which I STILL haven’t tried yet. Sorry, Amber!
  • You might have a child who doesn’t eat cookies! I swear, I didn’t start eating cookies until my sophomore year of college. And, I didn’t eat cupcakes until I was diagnosed with celiac disease. In this case, you can simply leave the ice cream mold uncovered!
  • Having trouble keeping the mold upside down in the freezer? Use a side door, and balance it with an icepack! Or pick a mold that’s flat up top!

Tricky, right?! Just kidding! Well, I’m excited for swimming, snorkeling, and some beach time adventures! What are you up to this weekend?!

    1. Thanks, Lori! Sister’s Day is one of my favorite days of the year. It’s always on a day where we’re both free in August because there were no family birthdays or major U.S. holidays.

You were super sweet to link to my blog, thank you beautiful! This looks DELISH, except, my favorite type of ice cream cake was the CARVEL KIND with the crunchies/fudge in the middle. Need to recreate that sometime soon…except i am the only one who will eat it, so sometimes I don’t feel like all the effort for just me. BUT i am totes with you on liking something after a diagnosis, for example, I was NOT a big chocolate fan/cake fan until my celiac/lactose intolerance, GO FIGURE 😛

    1. Come on over! I bet we can recreate that with a little bit of pixie dust. The outer frosting layer will be the trickiest, but I’m sure doable by the fiftieth try. 🙂

      I’m glad, I’m not alone on the crazy dietary preferences change. I swear I used to hate cakes, and I’m just now starting to like brownies. I guess we’re just crazy! 😀
